**Cornell Dairy Program and Rob Ralyea’s Legacy in Cheese Production**

Ithaca, NY – Cornell University has been a cornerstone of dairy education and research in the U.S. since 1880. As one of about 25 universities nationwide with a dedicated dairy component, Cornell operates a dairy plant that produces goods for both the campus and the surrounding community. Additionally, the program includes an incubator initiative, assisting entrepreneurs in launching new dairy products and entering the industry.

Rob Ralyea, the longtime manager of the Cornell Food Processing and Development Laboratory, played a significant role in these efforts. For the past 20 years, Ralyea spearheaded dairy extension programs across New York State, focusing on artisan cheese production and safety. He has contributed to the creation of many award-winning New York cheeses, earning a reputation as an expert in the field.

Ralyea retired in October, leaving behind a strong legacy of leadership and innovation in the dairy industry. His contributions have not only advanced cheese production but have also fostered growth and development in dairy entrepreneurship through Cornell’s programs.
